Tropical Chia Pudding

Serves 2

I love to have breakfast pre-prepared ready in my fridge, awaiting my upheaval out of the pit. This tropical combo of mango, banana and coconut is so full of healthy goodness and natural energy and will bring foodie cheer to any early morning.


  1. In a food processor, add the banana, mango, milk, vanilla, honey and turmeric and blend until smooth.
  2. Add the chia seeds and simply stir them in.
  3. Pour this mixture into your desired serving vessel and refrigerate preferably overnight.

You will need:

¾ cups of almond milk

¼ cup of chia seeds

1 tablespoon of honey or maple syrup

1 teaspoon of vanilla extract

½ teaspoon of turmeric

1 cup of fresh diced mango

1 banana, peeled and sliced

Toasted coconut chips to sprinkle on top
