Sun-dried Tomato Spelt Bread

Makes 1 loaf

Spelt is one of the oldest cultivated crops in history.

It's a variety of grain that is closely related to wheat. Packed with nutrients and high in fibre it is making a popular comeback on the health scene. The flour is perfect for bread and pizza baking, pasta making, in salads or as a rice alternative in its grain form.

I love using spelt flour and along with the combination of sun dried tomatoes and basil, this bread is delicate, yet tangy and delightfully delicious.


  1. Preheat your oven to 220C
  2. Line a loaf pan with grease proof paper or grease with olive oil.
  3. In a large bowl add the eggs.
  4. Slowly add the spelt flour and continuously stir so that it is well combined.
  5. Add the baking powder and stir in.
  6. Add the basil and stir in.
  7. Fold in the sun dried tomatoes.
  8. Pour the mixture into your prepared pan.
  9. Sprinkle with sunflower seeds.
  10. Bake in the oven for 30 minutes or until a skewer inserted comes out clean.

You will need:

2 cups of spelt flour

6 large beaten eggs

10 chopped sun dried tomatoes

2 tablespoons of minced basil

1 tablespoon of baking powder

¼ cup of sun flower seeds
