Roasted Tomato Soup


A classic soup rich in powerful antioxidants making it a healthylicious bowl of yum!


Method:


  1. Pre heat your oven to 180C
  2. Wash your tomatoes.
  3. Slice into quarters and lay them cut side down in an oven proof dish.
  4. Pour the olive oil and balsamic vinegar over them and give the dish a little shake, to coat all of the tomatoes.
  5. Nestle the red onion and garlic in between the tomatoes.
  6. Sprinkle with rosemary, oregano, salt and pepper.
  7. Put into your hot oven and bake for 45 minutes.
  8. Take the dish out of the oven and breathe in that delicious aroma.
  9. Allow to cool slightly for 5 minutes and transfer to your blender.
  10. Blend it until you are satisfied with the consistency.


I like to top mine with roasted chickpeas. A delightful crouton alternative.

You will need:


10 big fat juicy tomatoes

1 red onion cut into chunky wedges

3 cloves of garlic sliced into halves

1 tablespoon of dried rosemary

1 tablespoon of oregano

2 tablespoons of balsamic vinegar

3 tablespoons of olive oil

¼ teaspoon of salt

¼ teaspoon of black pepper
