Spicy Tomato Lentil Soup


Serves 6


Have you ever had a bowl of something so delicious that you just didn't want it to end? Well this is it for me! A delightfully tangy yet spicy tomato soup filled with lentils making it a healthy protein packed bowl of yum!


It's so quick and easy to make I'm sure it will be a favourite for you too.



Method:


  1. In a large sauce pan add all of the ingredients as listed above, except coriander and stir in well.
  2. Turn up the heat to medium.
  3. Bring the soup to a boil for 1 minute and then turn down the heat and allow to simmer for 20 minutes.
  4. Serve topped with coriander.


You will need:


3 cups of pre soaked lentils, rinsed and drained

3 cups of tomato frito/passata

1 cup of vegetable stock

¼ cup of apple cider vinegar

1 tablespoon of Worcestershire sauce

1 tablespoon of dried oregano

1 teaspoon of dried rosemary

½ teaspoon of turmeric

½ teaspoon of black pepper

½ teaspoon of smoked paprika

¼ teaspoon of cayenne pepper

A pinch of salt

1 cup of chopped coriander as garnish
