Have you ever had a bowl of something so delicious that you just didn't want it to end? Well this is it for me! A delightfully tangy yet spicy tomato soup filled with lentils making it a healthy protein packed bowl of yum!
It's so quick and easy to make I'm sure it will be a favourite for you too.
In a large sauce pan add all of the ingredients as listed above, except coriander and stir in well.
Turn up the heat to medium.
Bring the soup to a boil for 1 minute and then turn down the heat and allow to simmer for 20 minutes.
