Spelt Stuffed Mushrooms


Makes 4


I love supermarkets so much and if I could I would spend hours wandering the isles looking for inspiration.  And that’s exactly what happened today as I came across a bag of spelt. Now that might not sound so exciting to you, but my supermarket lacks imagination when stacking their shelves and even brown rice can sometimes be hard to come by, which is crazy I know.


After adding a few voluptuous mushrooms to my basket I decided i would stuff them with this new nutty grain.


Method:


  1. Preheat your oven to 200C
  2. De stem and wipe your mushrooms removing any dirt.
  3. Bring 2 cups of water to a boil and add the spelt.
  4. Simmer for 20 minutes, drain and set aside.
  5. In a frying pan heat your olive oil on a medium heat.
  6. Sauté the onion for a few minutes until it is soft.
  7. Add the garlic, herbs and spices and stir them in.
  8. Add the tomato sauce and vinegar and stir it in.
  9. Add the spelt and diced tomato and stir in. Turn off the heat.
  10. Place your mushrooms in an oven proof dish or baking sheet.
  11. Stuff with the spelt mixture.
  12. Top with a slice of feta and sprinkle with more oregano.
  13. Put them into your hot oven for 15 minutes


Enjoy them as an appetizer or a side dish.


You will need:


4 Portobello mushrooms

½ cup of spelt

½ cup of tomato frito or passata

¼ cup of apple cider vinegar

1 clove of minced garlic

1 small diced red onion

1 teaspoon of turmeric

1 teaspoon of black pepper

1 teaspoon of olive oil

1 tablespoon of oregano

1 large diced tomato

4 slices of feta cheese
