  1. Preheat your oven to 180C
  2. Line a muffin tray with paper cups
  3. In a bowl mix together the almond flour and bicarbonate.
  4. In a second bowl mix together the egg, maple syrup, almond milk, vanilla and olive oil.
  5. Pour the wet mixture into the dry mixture and whisk together until you have a lump free batter.
  6. Spoon the batter into the paper cups, no more than a quarter full.
  7. Add a heaped teaspoon of raspberry chia jam into the middle of the cup batter.
  8. Gently cover the jam with more batter.
  9. Top with fresh raspberries.
  10. Put them into your hot oven for 30 minutes.
  11. Allow to cool completely.
  12. Store them in an airtight container in your fridge for up to 3 days.

You will need:

2 cups of almond flour

¼ cup maple syrup

½ cup of almond milk

¼ cup of fresh, washed raspberries

2 tablespoons of olive oil

1 teaspoon of vanilla extract

¼ teaspoon of bicarbonate of soda

1 beaten egg
