You will need:
2 microwave safe mugs
½ cup of almond flour
¼ cup of shredded/desiccated unsweetened coconut
¼ cup of finely diced fresh strawberries
2 tablespoons of honey
2 teaspoons of melted coconut oil
1 teaspoon of vanilla extract
1 teaspoon of baking powder
1 beaten egg
Toasted coconut flakes and extra strawberries for garnish.

Strawberry Coconut Mug Cake
This delightful cake in a mug has fast become my favourite gluten and grain free breakfast in a hurry or afternoon sweet treat. It's so easy to make, full of natural goodness...and it's so fluffy ;)
The batter can be prepared the day or night before ready for when you want it.
