You will need:


2 microwave safe mugs

½ cup of almond flour

¼ cup of shredded/desiccated unsweetened coconut

¼ cup of finely diced fresh strawberries

2 tablespoons of honey

2 teaspoons of melted coconut oil

1 teaspoon of vanilla extract

1 teaspoon of baking powder

1 beaten egg

Toasted coconut flakes and extra strawberries for garnish.

Strawberry Coconut Mug Cake


This delightful cake in a mug has fast become my favourite gluten and grain free breakfast in a hurry or afternoon sweet treat. It's so easy to make, full of natural goodness...and it's so fluffy ;)


The batter can be prepared the day or night before ready for when you want it.


Enjoy this foodie hug in a mug!


Method:


  1. In a bowl, whisk together the egg, vanilla, honey and coconut oil.
  2. Add the almond flour, baking powder and coconut and mix well.
  3. Stir in the diced strawberries.
  4. Spoon the batter equally into the two mugs.
  5. One at a time, cook them in your microwave for 1 minute and 30 seconds each.
  6. Invert onto a plate and serve with strawberries and toasted coconut or any other additions you favour.
