You will need:

1 large mug

¼ cup of chopped walnuts (or any nut you favour)

2 large beaten eggs

3 tablespoons of honey

2 tablespoons of coconut flour

2 tablespoons of almond flour

1 tablespoon of cacao nibs (or dark chocolate chips)

1 teaspoon of vanilla extract

Mega Mug Cake

(with cacao nibs and walnuts)

Makes 1 large mug cake

A cake in a mug...are you crazy? It may not be beautifully named, but what a delightful creation the mug cake is! So quick and easy to make and it tastes scrumptious!

If you are pushed for time in the morning and don't always get chance to have breakfast then this could be a perfect healthy start to your day :) Gluten, grain and refined sugar free,  it's a fantastic sweet morning munch. It would take mere minutes to prep the night before and again literally only minutes to make the next day.


  1. In your large mug add the eggs, honey and vanilla and whisk together to combine.
  2. Add the coconut and almond flour and mix well until you have a lump free batter.
  3. Stir in the cacao nibs.
  4. Sprinkle the top with the chopped walnuts.
  5. Pop this mug into the microwave and cook on full power for one minute and 30 seconds.
  6. Have peak at it. It should be firm and coming away from the sides slightly.
  7. Eat it straight out of the mug and enjoy.
