  1. Line a loaf pan with parchment paper
  2. In a large bowl mix together the almond flour, coconut flour,  coconut sugar,  bicarbonate,  poppy seeds and matcha.
  3. In a second bowl, lightly whisk together the almond milk, olive oil, honey, egg, lemon zest, juice and extract.
  4. Pour the wet ingredients in to the dry and mix well until everything is combined.
  5. Pour your batter into the loaf pan.
  6. Pop the pan into your hot oven and bake for 25 to 30 minutes or until the cake is firm to touch.
  7. At any time during baking, if you think the cake is starting to brown too much just cover lightly with foil.
  8. Take the cake out of the oven and allow to cool before removing from the pan.
  9. Refrigerate the cake to cool completely.
  10. In a small bowl stir together the coconut cream, honey and lemon extract.
  11. Add the food colour a little drop at a time until it's the colour you like.
  12. Stir the cream until smooth but don't over work it or it could split.
  13. Frost the now cold cake any way you like (I just drizzled mine) and top with the pistachio nuts.
  14. Store in an airtight container in your fridge for 3 days.

You will need:

3 tablespoon of Matcha green tea powder

The juice of 1 lemon

The zest of 4 lemons

1½ cups of almond flour

½ a cup of unsweetened almond milk

½ a cup of coconut sugar

¼ cup of coconut flour

3 tablespoons of honey

2 tablespoons of olive oil

2 tablespoons of poppy seeds

1 teaspoon of lemon extract

¼ teaspoon of bicarbonate of soda

1 large beaten egg

For the frosting:

160ml of coconut cream

1 teaspoon of lemon extract

1 tablespoon of honey

1 teaspoon of natural green food colour (optional)

2 tablespoons of unsalted, shelled and chopped pistachios

Matcha Lemon Cake

I adore green tea and drink it daily but I've never baked with the mighty Matcha. This is my first recipe with it and won't be the last...I mean, a healthy gluten and grain free cake that speeds ones metabolism up while eating it? I'm in! Haha

This cake is definitely for the tea lovers because you can really taste the earthy and slight bitterness which won't appeal to all, but there is also the lush lemony tang and natural sweetness that carries through.  I'm a fan and I hope you enjoy it too xx
