The chia pudding is a wonderful creation and I'm a big fan. In the past I've always stuck to berry filled versions, but after a trip to the market where an abundance of kiwi fruits were purchased, my mind wandered to chia pud possibilities.
These furry little fruits are so full of goodness, they have five times the vitamin C of an orange along with Vitamin A, K and E, making them a powerhouse of nutrition. Paired with avocado, which is also fibre filled, potassium packed along with heart healthy fatty acids and then on top of that the magical chia seeds filled with more fibre, protein and omega-3 fatty acids.....I knew this creamy pud was going to be a glorious green, healthylicious delight.
In a food processor add the kiwi, avocado, honey, vanilla and almond milk and blitz until it's as smooth as possible.
Stir in the chia seeds and pour the green goodness into your serving glasses/bowls.
Allow to set in the refrigerator for at least an hour or overnight if possible.
Garnish with extra sliced kiwi if you wish and enjoy.
You will need:
¾ cup of almond milk
¼ cup of chia seeds
1 ripe avocado, peeled, de-stoned and diced
1 tablespoon of honey
1 teaspoon of vanilla extract
2 peeled and sliced kiwi fruit plus one for garnish if you wish.
