Egg Fried Cauliflower Rice


Serves 2


Thanks to cauliflower, going low carb couldn't be easier! This cruciferous winner works so well as a rice replacement. Not only is it full of goodness and health benefits, it tastes fantastic too.


Method:


  1. Cut your cauliflower into small florets and discard the stem and leaves.
  2. Rinse your florets.
  3. Add the florets to a food processor with the turmeric, salt, cayenne and pepper.
  4. Blitz the cauliflower until it is grain like. This will not take long.
  5. Heat a frying pan with olive oil on medium heat.
  6. Add the spring onions and garlic and stir fry for a minute.
  7. Add the cauliflower, along with the coconut, peas, soy sauce and vinegar and sauté for 7 minutes.
  8. Make a well in the middle of the cauliflower and crack an egg into it.
  9. Scramble the egg and stir it through the rice.
  10. In a separate pan heated to medium high with olive oil fry the second egg to your liking.
  11. Transfer the cauliflower rice to a serving bowl and garnish with coriander and your fried egg.


You will need:


1 cauliflower

2 eggs

1 minced clove of garlic

4 spring onions

½ cup of peas

½ cup of fresh coriander

¼ cup of unsweetened desiccated coconut

2 tablespoons of soy sauce

1 tablespoon of apple cider vinegar

½ teaspoon of turmeric

¼ teaspoon of salt

¼ teaspoon of black pepper

¼ teaspoon of cayenne pepper
