Cranberry Stuffed Turkey Meatloaf


Makes 1 loaf/serves 4


Come December I find it hard not to put cranberries into everything I make and so I've given into my berry obsession and I bring you this bejewelled and festive turkey meatloaf.


Method:


  1. Preheat your oven to 200C
  2. Soak your cup of dried cranberries in the boiled hot water for 15 minutes. Drain and set aside to cool.
  3. In a bowl add the egg, tomato puree, garlic, salt, pepper, turmeric, oregano, sage and chives and whisk together.
  4. In a second larger bowl add the turkey mince.
  5. Pour the egg mixture over the turkey and gently mix in.
  6. Add the cranberries and mix them in.
  7. Add the parmesan followed by the bread crumbs and with your hands gently massage until it’s all incorporated
  8. Grease your loaf tin with olive oil and line with grease proof paper.
  9. Put your turkey mixture into the loaf tin and flatten down slightly so it all fits in nicely.
  10. Put your turkey loaf into your hot oven and bake for 45 minutes or until an instant thermometer inserted into the middle of the loaf reads 160F.
  11. Take the loaf out of the oven.
  12. Cut into slices and serve with your favourite roast vegetables and gravy.


You will need:


400 grams of turkey mince

1 cup of dried cranberries

1 cup of boiled water

½ cup of parmesan

¼ cup of bread crumbs (I use gluten free)

¼ cup of chopped chives

1 tablespoon of tomato puree

1 tablespoon of dried sage

1 tablespoon of dried oregano

1 teaspoon of garlic granules

1 teaspoon of turmeric

½ teaspoon of black pepper

¼ teaspoon of salt

1 beaten egg

Olive oil for greasing
