Coconut Dream Balls


Makes 12


As a child, my sister and I would always be "treated" to a chocolate bar of our choice from the corner shop on a Saturday morning. Although our Mum would always make us wholesome home cooked meals throughout the week this would be something my Sister and I greatly looked forward too. Peaking at the counter of colourful wrappers containing the sugary delights, it was an absolute treat and I would always choose a bounty bar.


As a grown up and still a huge fan of coconut i knew there must be a healthylicious alternative to these sweet treats.


Method:


  1. In your food processor, blitz the cashew nuts until they are pulverized into very fine pieces.
  2. Add the coconut and blitz for 30 seconds.
  3. Add the honey and coconut essence and blitz for 1 minute.
  4. Separate the mixture into 12 portions, or as many as you can make.
  5. In your hand roll each portion, squeezing tightly to make a ping pong sized ball.
  6. Put the balls onto a freezer safe tray lined with grease proof/parchment paper and freeze for 15 minutes.
  7. Break the block of chocolate into smaller pieces.
  8. Bring a pan of water to boil and turn down the heat to a simmer, place a heat proof bowl over the pan and add your chocolate.
  9. Melt the chocolate over the heat. Keep your eye on it.
  10. When the chocolate has melted remove it from the heat.
  11. Take out your coconut balls from the freezer.
  12. One by one dip the balls in the chocolate and completely coat them.
  13. Once coated in chocolate, put them back on the lined tray and put them in the freezer for another 15 minutes.

Keep these delicious coconut delights in an airtight container in your fridge.  I'd say they will keep for a couple of weeks but I'm pretty sure they won't last that long once you've tried one.


You will need:


1 cup of unsalted cashews

3 cups of desiccated coconut

6 tablespoons of honey

2 teaspoons of coconut extract

250g block of dark chocolate
