I was brought up drinking hot tea, from the age of 14 it was the first drink of the morning and was followed by copious cups of the strong brew throughout the day. Now that sounds fine right? But, that cup of tea was never alone, it was always paired with at least a biscuit/cookie or come afternoon a big slice of cake made by my Nanna....the feeder ;)
Today we have a lot more nutritional knowledge available at our finger tips and my days of dunking biscuits in my tea are long gone and for the most part not missed.
It's my husband that has the sweet tooth now and I do like a sweet treat every now and then and so these soft chocolate chip cookies are a perfect accompaniment to our afternoon Green tea.
Not only are they super quick and easy to make, they are grain free, gluten free, dairy free, paleo and vegan friendly making them a healthylicious nibble.
Preheat your oven to 180C
Line a baking sheet with parchment paper.
In a bowl combine the almond flour, coconut sugar and baking soda.
Add the olive oil, almond milk and vanilla and mix together.
It will come to a point when it's easier to use your hands and manipulate the mixture into a dough.
Separate the dough into 8 portions and roll them into balls.
