Chocolate Chip Almond Cookies


Makes 8


I was brought up drinking hot tea, from the age of 14 it was the first drink of the morning and was followed by copious cups of the strong brew throughout the day. Now that sounds fine right? But, that cup of tea was never alone, it was always paired with at least a biscuit/cookie or come afternoon a big slice of cake made by my Nanna....the feeder ;)


Today we have a lot more nutritional knowledge available at our finger tips and my days of dunking biscuits in my tea are long gone and for the most part not missed.


It's my husband that has the sweet tooth now and I do like a sweet treat every now and then and so these soft chocolate chip cookies are a perfect accompaniment to our afternoon Green tea.


Not only are they super quick and easy to make, they are grain free, gluten free, dairy free, paleo and vegan friendly making them a healthylicious nibble.


Method:


  1. Preheat your oven to 180C
  2. Line a baking sheet with parchment paper.
  3. In a bowl combine the almond flour, coconut sugar and baking soda.
  4. Add the olive oil, almond milk and vanilla and mix together.
  5. It will come to a point when it's easier to use your hands and manipulate the mixture into a dough.
  6. Separate the dough into 8 portions and roll them into balls.
  7. Flatten the balls into your desired cookie size.
  8. Top with the chocolate chips or cacao nibs.
  9. Bake in your hot oven for 12 minutes.
  10. Allow the cookies to cool.
  11. Store in an airtight container for up to 3 days.


You will need:


2 cups of almond flour

½ cup of coconut sugar

¼ cup of olive oil

¼ cup of dark chocolate chips or cacao nibs

2 tablespoons of almond milk

1 teaspoon of vanilla extract

¼ teaspoon of baking soda
