Chickpea Veggie Burger

Makes 4 burgers

A vegetarian dish at a bbq needn't be an uninspiring afterthought or just a lame selection of vegetables on a stick and although I'm not a full on vegetarian  I don't eat a lot of meat so a veggie option can always be a winner for me.

A veggie burger doesn't have to be potato based or covered in bread crumbs and fried, it's fun to get creative and make your own.


  1. Heat a frying pan with a little olive oil on a medium heat and saute the onion, garlic and peppers for a few minutes until soft.
  2. Set aside to cool.
  3. In a food processor blitz the sprouts until they are roughly chopped
  4. Add the chickpeas, egg, vinegar, turmeric, pepper, cayenne, oregano and tomato puree and pulse until you have a mostly rough mixture.
  5. Spoon the chickpea mixture into a bowl and stir in the cooled onion, peppers, garlic and seeds.
  6. Add the parmesan and almond flour and mix it all together.
  7. Separate the mixture into 4 portions, roll them into balls and flatten into patties either by hand or with a burger mould.
  8. Plate, cover and refrigerate the patties until you wish to cook them.
  9. I like to cook mine on a lightly oiled grill pan for 2 or 3 minutes on each side.

You will need:

1 cup of pre soaked chickpeas, rinsed and drained

½ cup of diced onion

¼ cup of diced bell pepper

¼ cup of almond flour

¼ cup of grated parmesan

¼ cup of sunflower seeds

12 Brussels sprouts, washed and halved

2 cloves of minced garlic

1 beaten egg

1 tablespoon of tomato puree

1 teaspoon of apple cider vinegar

1 teaspoon of oregano

½ teaspoon of turmeric

½ teaspoon of black pepper

½ teaspoon of cayenne pepper
