Carrot Amazeballs


Little balls of energy

A healthylicious bite with an afternoon cuppa or a pre- gym nibble to give you an energy boost.


Method:


  1. In your food processor, blitz the dates, raisins, coconut oil and vanilla extract for 1 minute.
  2. Add the oats, carrots, coconut, ginger and cinnamon and pulse for 20 seconds.
  3. Transfer to a separate bowl
  4. Spoon out the mixture and form into ping pong size balls
  5. Refrigerate.

They will stay good for a week in your fridge


You will need:


1 cup of grated carrots ( usually 2 large carrots )

1 cup of oats

1 cup of pitted and chopped dates

¼ cup of desiccated coconut

¼ cup of raisins

1 tablespoon of coconut oil

1 teaspoon of vanilla extract

½ teaspoon  of ground ginger

1 tablespoon of ground cinnamon
