Makes 5 large fritters (quantity will be dependent on the fritter size you desire)
This is a lovely quick and healthy meal that's perfect for using any leftover veggies and a fantastic way to introduce veggies into your breakfast :) Although I'm using cabbage and carrot in this recipe, any sliced or diced vegetables would work just as well.
In a large bowl mix together the almond flour, flax meal, parmesan, turmeric, cayenne, black pepper and salt.
Add the carrot, onion and cabbage and stir in.
Add the beaten eggs and mix all of the ingredients together to create a textured thick batter.
Heat a greased frying pan on medium heat.
Take a large heaped spoon full of the batter and place it in the hot pan.
Gently pat the mixture down in the pan to create a rough circle. Cook for a minute or two on each side or until golden brown.
Stack the hot fritters on your serving plate and enjoy!
