Serve the porridge and top with the remaining blueberries and almonds.
You will need:
1 cup of quinoa
2 cups of unsweetened almond milk
½ teaspoon of cinnamon
1 teaspoon of coconut sugar
1 cup of blue berries
¼ cup of unsalted almonds
Quinoa and Blueberry Porridge
Banish those Monday blues with blueberries.
These little blue balls of complete nutrition are full of fibre, water and vitamin C. Low in sugar and calories yet high in the all powerful antioxidants, they are indeed a super-food.
As an added bonus, blueberries are a great anti depressant, with their naturally occurring sugar, they help to maintain a balanced blood sugar level, banishing all possible mood swings.
And well, they are just so cute! Who wouldn't be delighted when presented with this bowl of blueberry goodness?
