  1. In a pan bring the almond milk to a boil.
  2. Add the quinoa, cinnamon and coconut sugar and then immediately reduce the heat.
  3. Stir every few minutes.
  4.  Allow to simmer for 20 minutes.
  5. Stir in half the cup of blueberries.

Serve the porridge and top with the remaining blueberries and almonds.

You will need:

1 cup of quinoa

2 cups of unsweetened almond milk

½ teaspoon of cinnamon

1 teaspoon of coconut sugar

1 cup of blue berries

¼ cup of unsalted almonds

Quinoa and Blueberry Porridge

As an added bonus, blueberries are a great anti depressant, with their naturally occurring sugar, they help to maintain a balanced blood sugar level, banishing all possible mood swings.

And well, they are just so cute! Who wouldn't be delighted when presented with this bowl of blueberry goodness?
