Berry Pom Porridge

Serves 2


Breakfast is the most important meal of the day, we are literally breaking the sleeping fast and we are running on empty in need of refuelling.


Oats are a classic favourite for a morning munch because they are wholegrain, rich in fibre, and slowly release energy making them a blood sugar stabilizer. Throw on some antioxidant rich fruit and protein packed nuts and seeds and you've got yourself a breakfast winner!


Method:


  1. Add the almond milk to a pan and gently heat until it simmers.
  2. Stir in the honey and vanilla.
  3. Add the oats and cook on a medium heat for 20 minutes, stirring every few minutes.
  4. Stir in the strawberry chia jam, the diced strawberries and most of the pomegranate seeds.
  5. Spoon into serving bowls and sprinkle with the remaining pomegranate, nuts, seeds and top with the whole strawberries.


You will need:


1 ½ cups of almond milk

1 cup of oats (do not use instant oats)

¼ cup of Strawberry chia jam

2 teaspoons of honey

¼ teaspoon of vanilla extract

4 diced strawberries plus 2 whole for garnish

The seeds from ½ a pomegranate

1 tablespoon of pumpkin seeds

1 tablespoon of unsalted chopped nuts (almonds, brazil or walnuts)
