Basil Bean and Tuna Salad


This is such a favourite and tasty way for me to eat tuna. Until I created this combination, i would always buy tinned tuna and months later still find them at the back of my cupboard all lonely...but not any more ;)


The combination of the basil pesto, sun dried tomatoes, red onions and beans ticks all of my boxes. It's protein packed, full of fibre and flavour and I like to make a big batch that will last me for 3 days or its perfect for a BBQ party or picnic :)


Method:


  1. Make my walnut basil pesto.
  2. Then simply combine all of the ingredients together and make it as pretty as you wish.
  3. Store in an airtight container or covered serving bowl for up to 3 days.


You will need:


1 ½ cups of drained and rinsed white beans (or any other you prefer)

1 cup of my walnut basil pesto

1 cup of drained tinned tuna

½ cup of diced red onion

½ cup of diced cucumber

¼ cup of diced sun dried tomatoes

¼ cup of sun flower seeds
