Over the last couple of years, the combination of eggs and avocado has really been a foodie obsession. Whether you are baking an egg in an avocado or you have mashed that avocado and slathered it on toast and topped it with a poached egg, the taste sensation is delightful!
I wanted to combine my love of eggs and avocado in a satisfying, tasty low carb, paleo friendly dish, and then i thought, why not take care of another strong food craving that I think we all struggle with from time to time, pizza!! I love pizza, but it doesn't love me back in quite the same way, so I made a beautiful avocado pizza omelet.
Now, I am not saying this is in any way a pizza crust as you would know it, but It is a light and delicate oversized omelet, masquerading as a pizza, completely hitting all the right taste buds, leaving you sated, satisfied and able to watch a pizza commercial on tv without licking the screen.
Pre heat your oven to 200C
Grease your oven proof dish or pan with olive oil. I used a 9" quiche/pie dish
In a bowl beat your eggs until the whites and yolks are combined.
Add the almond milk and whisk for 30 seconds.
Add the salt, pepper and turmeric and whisk for 30 seconds.
Add the parmesan and whisk this altogether until it is lump free.
Stir in the chives.
Pour this mixture into your oiled pan.
Place the tomatoes and avocado on top of the batter.
Sprinkle with the oregano and chili flakes.
Pop this into your hot oven for 20 minutes or until it is golden brown around the edges and completely set in the middle.
