Avocado Aioli



Although I hail from Manchester England, my husband and I have lived in Spain for many years. When eating out in Spain you will usually always be presented with a complimentary basket of bread accompanied by a delightful dip known as alioli.


It is simply a tangy and heavily garlicky thick mayonnaise and it is muy bien ;)

I wanted to make something similar but instead of the naughty mayo I'm using the awesome avocado and this results in the same thick consistency but with healthier vibe and along with the zesty lime and fresh coriander it's very delicious dip indeed.



Method:


  1. In a food processor,  blitz the coriander with the garlic and lime juice for 15 seconds, you may need to now scrape down the sides and then blitz for another 15 seconds.
  2. Add the avocado, apple cider vinegar and a ¼ cup of the olive oil and blend until the avocado is as smooth as possible.
  3. Add the remaining ¼ cup of olive oil along with the salt and pepper and blend for 10 seconds.
  4. Pour the aioli into a sealable vessel and store in your fridge for up to 3 days.


You will need:


2 cups of fresh coriander, rinsed and drained

½ cup of olive oil

¼ cup of apple cider vinegar

2 minced cloves of garlic

The juice of 2 limes

1 ripe avocado, peeled, de-stoned and diced

A pinch of salt and pepper
