Serves 4 to 6 people


A frittata is such a perfect dish to add anything to. Whilst scouring the supermarket shelves I picked up a few items that I thought would be nice and a little different in this brunch classic.



Method:


  1. Preheat your oven to 200C
  2. In a bowl mix your eggs with the parmesan.
  3. With the olive oil, thoroughly grease a baking dish or pan.
  4. Pour your egg mixture into this pan.
  5. Arrange the olives, capers, onion, pepper and tomatoes on top of the egg mixture.
  6. Sprinkle with rosemary.
  7. Carefully put your dish into your hot oven.
  8. Bake for 20 minutes or until it is golden and the middle is set.


You will need:


6 large beaten eggs

½ cup of grated parmesan

¼ cup of chopped sun dried tomatoes

¼ cup of roasted red pepper slices

1 tablespoon of capers

1 tablespoon of sliced black olives

1 tablespoon of dried rosemary

¼ cup of red onion slices

1 tablespoon of olive oil
