Serves 4 to 6 people
A frittata is such a perfect dish to add anything to. Whilst scouring the supermarket shelves I picked up a few items that I thought would be nice and a little different in this brunch classic.
You will need:
6 large beaten eggs
½ cup of grated parmesan
¼ cup of chopped sun dried tomatoes
¼ cup of roasted red pepper slices
1 tablespoon of capers
1 tablespoon of sliced black olives
1 tablespoon of dried rosemary
¼ cup of red onion slices
1 tablespoon of olive oil
