Aloha Balls

Makes 10

I don't particularly have a sweet tooth and I definitely favour savoury goodies, however I do love pineapple, macadamia nuts and coconut, and so I was inspired by my love of all things tropical and my visits to beautiful Hawaii to make these fruity treats.


  1. In your food processor add the cashews and macadamia nuts and blitz them until they are in tiny pieces.
  2. Add the pineapple and blitz again for 30 seconds.
  3. Add the coconut, vanilla, coconut oil and honey and blend for 30 seconds.
  4. Spoon the mixture in to your hand, squeezing tightly and roll into a ping pong sized ball.
  5. Refrigerate in an airtight container for up to a week.

You will need:

1 cup of unsalted cashews

1 cup of unsalted macadamia nuts

1 cup of dried pineapple pieces

2 cups of desiccated coconut

1 tablespoon of coconut oil

4 tablespoons of honey

½ teaspoon of vanilla essence
