Almond Lemon Cookies


Makes 8 cookies


On the whole, the population of Great Britain are major munchers of biscuits and cookies, they are bought by the shopping basket full and consumed daily.


I was brought up on digestive biscuits and hobnobs to dunk into my cup of tea or homemade ginger biscuits made by the bucket load by my Nanna.


These days I absolutely avoid buying any biscuits and I don't miss the sugary crumbly bite one bit. But my husband is rather fond of a sweet treat and all things lemony and so these cookies are perfect.


Gluten free, vegan and super simple to make they are a cookie I don't mind nomming.


Method:


  1. Line a baking sheet with parchment paper
  2. Preheat your oven to 180C
  3. In a bowl, add the flour, baking soda, cardamom, turmeric and coconut sugar and whisk together.
  4. Add the lemon juice, zest and oil and mix well until a dough has formed.
  5. Portion the dough into 8 balls and flatten them into patties.
  6. Place them on the baking sheet.
  7. Bake for 10 minutes
  8. Cool on a rack
  9. Store in an airtight container at room temperature for 3 days.


You will need:


2 cups of almond flour

½ cup of coconut sugar

¼ cup of olive oil

The juice of 1 lemon

The zest of 3 lemons

1 teaspoon of turmeric

1 teaspoon of ground cardamom

¼ teaspoon of baking soda
