Almond Coconut Scones
The tradition of the English afternoon tea is well known for its mini bites and delicious treats but not at all for being a healthy affair.
My Nanna would always make scones on a Saturday and by Sunday they would have vanished into our tummies along with spoonfuls of jam and cream, scrumptious yes, healthy, no.
But I still love scones and so I decided to make my own healthylicious version.
You will need:
2 cups of almond flour
¼ cup of shredded coconut
¼ cup of coconut sugar
1 large beaten egg
2 tablespoons of honey
1 teaspoon of vanilla extract
½ teaspoon of baking soda
