Almond Coconut Scones

Makes 6


The tradition of the English afternoon tea is well known for its mini bites and delicious treats but not at all for being a healthy affair.


My Nanna would always make scones on a Saturday and by Sunday they would have vanished into our tummies along with spoonfuls of jam and cream, scrumptious yes, healthy, no.


But I still love scones and so I decided to make my own healthylicious version.


Method:


  1. Preheat your oven to 180C.
  2. Line a baking sheet with parchment paper.
  3. In a bowl mix together the almond flour, baking soda, coconut and coconut sugar.
  4. In a separate bowl add the egg, honey and vanilla and whisk together.
  5. Pour the egg mixture into the flour and mix together to form a dough.
  6. Cut six portions from the dough and roll each one into a ball.
  7. Flatten each ball slightly into a scone like shape.
  8. Put the scones onto your prepared tray and into your hot oven.
  9. Bake for 15 minutes.
  10. Serve warm straight from the oven topped with my strawberry or raspberry chia jam and a dollop of coconut cream.
  11. Alternatively store in an airtight container in your fridge for a week.


You will need:


2 cups of almond flour

¼ cup of shredded coconut

¼ cup of coconut sugar

1 large beaten egg

2 tablespoons of honey

1 teaspoon of vanilla extract

½ teaspoon of baking soda
